Quinoa Porridge – quick and easy 

I used to eat so much quinoa porridge and I recently got back in to it…here is the recipe I always use for my porridge:

Ingredients:

  • 1 cup of White Quinoa
  • 2 cups of Water
  • 1 cup of Coconut Milk + extra for serving
  • 1/2 cup of Goji Berries
  • 1 tsp Raw Cocoa Powder (this idea came from my genius sister)
  • A sprinkle of flaked almonds
  • Any extra berries or fruit.

Method:

  1. Add your Quinoa and Water in to a pot, cook on medium heat for 15 minutes.
  2. Take off the heat, add your 1 cup of coconut milk, berries and cocoa powder (plus any extras you want to add here or save for serving). Cook on low for a further 5 minutes.
  3. Add to a bowl, pour desired amount of coconut milk over and add flaked almonds (again, add something else if you want to be creative).
